Bettys Tea Room's Egg

They used chocolate from the Venezuelan Criollo Bean and continued a tradition set by the founder of Bettys, Frederick Belmont, who designed the eggs with hand-piped icing designs.

The designs on the 12-pound egg took around an hour, including designs of foliage such as pansies, primroses, and ferns. They used royal icing to make it with piped white chocolate for the stems to showcase their detailed craftsmanship.

​

The imperial egg is sometimes bought for easter time weddings in replacement for cake and requires a two-week notice to create the iconic chocolate egg.
